Yawn. Crepes tomorrow instead.
After a long evening of feeling blah, the crepe dinner did not materialize. Some errands happened instead and looking at the time, I decided to swap tonight's dinner in its place. So, we toasted some Weight Watchers whole wheat bagels (I got these free at a bakery with an online coupon), spread a bit of light herb and garlic cream cheese on them, and topped them with smoked salmon chunks and lemon juice. A side of fresh avocado slices and tomato was all this needed. Plus, lots of salt and pepper. I really need to stop using salt. It's gotten a little out of control lately. Needless to say, my willpower to take photos of this dinner prep and plate did not materialize so just imagine on the white plate the lovely deep red of the smoked salmon, the warmer tomato red and the rich avocado green. Easy peasy.
